Lets Talk Salsa

This mornings post is all about salsa! Living in Texas, most meals around here are started with chips and salsa. Whenever we have a special occasion at the house we usually whip up some snacks to keep everyone from going into raptor mode while dinner is cooking and these are some of our favorite recipes. So check them out, pin them, try them, and enjoy them!



Ingredients:
4 cans of diced pineapples - drained {may need to press them to get the majority of the juice out}
A handful of cilantro
2 small onions - chopped large
1 full of canola oil
2 packets of whatever sweetner you prefer - I used Splenda
Lime juice
Salt 

In a food processor add the onions, a dash or two of lime juice, cilantro, and oil and blend well.



Then add the pineapple, sweetner, and blend. Salt to taste,  drain any extra juice if you would like and then put in a bowl to enjoy with some tortilla chips!



This recipe is modeled after our favorite local restaurants, Margarita's, salsa with a bit more freshness!

Ingredients:
1 onion
1 jalepeno - seeds removed
2 cloves of garlic
4 large tomatoes - chopped 
2 cans of rotel - drained
Handful of cilantro
3 tbsp of lime juice
1/2 tbsp of cumin
Salt to taste

Combine onions, jalapeno, garlic, rotel, cumin, and cilantro in a food processor and blend.


Next add the tomatoes, lime juice, and blend! 


Salt to taste, and dig in!

I have been dying to try this recipe! So since it was my father's birthday I thought it was a perfect time. I made a double batch, added a little more cumin then it calls for, and instead of using 8oz of yogurt I only used 6oz. You can find Two Peas & Their Pod's recipe here. It was DELICIOUS! Even though I made a double batch, it didn't last long at all. Smooth and tasty!
